Ten botanicals, and the point of all ten is balance. Tart hibiscus, rose hip, and goji berry sit on one side, sweet chamomile and citrus peel fill the middle, and cooling peppermint with a warm edge of ginger finishes the cup. It brews a deep ruby-red, caffeine-free infusion, lovely hot as an evening pour or cold-brewed overnight into a tart, fruity iced pitcher. A spoonful of honey and a slice of orange dress it up.

The blend is measured to round itself out. Hibiscus and rose hip bring a cranberry tartness, goji and orange peel add fruit-sweetness, chamomile softens the edges, and peppermint and ginger keep it bright rather than heavy. Two brewing notes matter with a blend like this. Fully boiling water and a long steep pull bitterness out of the chamomile and berries, and fine botanical dust slips through a wide strainer, so a snug infuser keeps the cup clear.

How do I brew it?

Use one teaspoon per eight ounces of water. Heat fresh filtered water to around 200°F, pour it over the blend, and steep for three minutes for the best flavor. Use fresh leaves each time you brew. Water at a full rolling boil or a longer steep draws bitterness out of the chamomile and berries.

How do I cold brew it?

Add the blend to cold water, roughly a tablespoon per pint, and leave it in the fridge overnight. Strain in the morning for a smooth, ruby-red iced tea with no bitterness. Cold brewing pulls out the tart-sweet fruit notes gently and skips the astringency that hot water and a long steep draw out.

The goji berries plump up. Are they edible after brewing?

Yes. The softened goji berries are pleasant to eat, lightly sweet and chewy. Spoon them out of the pot and eat them on their own, or add them to oatmeal or a broth so nothing goes to waste.

Does it have caffeine?

No. All ten botanicals are herbs, flowers, fruit, and peel, with no black or green tea, so it is caffeine-free and suits an evening cup or an all-day iced pitcher.
