How do I brew it?

Use one teaspoon of leaves per eight ounces of water. Heat fresh water to about 200°F and pour it over the leaves. Steep for three minutes, then remove the leaves. Use fresh leaves each time you brew.

What is bergamot?

Bergamot is a small, fragrant citrus grown mostly around the Mediterranean. Its aromatic oil is what gives Earl Grey its signature perfumed, floral-citrus character. It is scent and flavor, not sourness.

Should I add milk or lemon?

Either suits it, though not together. Milk makes it rounder and more like a traditional English cup; a thin slice of lemon lifts the bergamot and keeps it bright. Try it clear first to meet the bergamot on its own.

Does it work in baking?

Beautifully. Grind the dry leaves fine and fold them into shortbread, pound cake, or scones, or steep them in warm cream for a bergamot-scented custard or frosting.
