A pot of chai on the stove, a tray of winter cookies, or a fragrant biryani turns floral and aromatic the moment green cardamom pods go in. Crush a few pods and drop them whole into simmering milk for masala chai, tuck them into rice and curries, or grind the inner seeds into cakes and sweet breads. The pale green shell protects the sticky black seeds inside, where the perfume actually lives.

Whole pods are the longest-keeping form of cardamom. Sealed in their shells, the volatile oils stay locked away until you crack them, so the aroma is at full strength when you cook. We pack our whole green cardamom in Portland and leave the pods intact for that reason: grind or crush them yourself, right before they go in the pan.

How do I crack cardamom pods without bruising the seeds?

Press each pod with the flat of a knife or a rolling pin until the shell splits. Drop the whole cracked pod into simmering liquids and fish out the shells before serving, or scrape the tiny black seeds free and grind those for baking.

How much cardamom should I use?

Cardamom is potent. Start with two or three pods for a pot of chai or rice, or a pinch of the ground seeds for a batch of cookies, then taste and build from there.

What is the difference between green and black cardamom?

Green cardamom is floral, sweet, and cool, at home in both sweet and savory dishes. Black cardamom is larger, smoky, and dried over fire, suited to hearty braises and rich curries. They are not a one-to-one swap.

How do I store whole pods?

Keep the pods in a sealed jar away from heat and light. Whole pods hold their aroma far longer than pre-ground cardamom, which is why we sell them this way.
