In Ayurveda, the tradition holds that every person is a unique mix of three doshas, Vata, Pitta, and Kapha, and that each of us leans toward one. Vata is the one associated with air and movement, and for thousands of years the Ayurvedic kitchen has paired it with warm, sweet, grounding flavors.
