How do I rehydrate freeze-dried shallots?

Cover the amount you need with a little warm water and let them sit for about five minutes until soft. Drain off any extra, then use them as you would fresh minced shallot. In a dish that already has liquid, add them dry and let them plump as it cooks.

How are freeze-dried shallots different from fresh?

Freeze-drying removes the water while keeping the shape, color, and most of the fresh flavor, so they store for a long time and are always ready.
