  • 2 cups ripe mango (diced (about 2 medium mangoes))
  • 1/4 cup red onion (finely diced)
  • 1 medium red bell pepper (diced)
  • 1/4 cup fresh cilantro (chopped)
  • 2 tbsp fresh lime juice (from about 1 lime)
  • 1 tsp Chipotle Citrus seasoning (or more to taste)
  • 1/4 tsp sea salt

Instructions

  1. Dice the mango into 1/4-inch cubes. Place in a medium bowl.
  2. Add the red onion, red bell pepper, and cilantro to the bowl.
  3. Squeeze the lime juice over the fruit and vegetables.
  4. Sprinkle in the Chipotle Citrus seasoning and sea salt. Toss gently to combine.
  5. Taste and adjust. Add more seasoning for heat, more lime for brightness, or a pinch more salt.
  6. Let sit for 10 minutes at room temperature so the flavors settle. Serve.

Notes

For a milder salsa, start with 1/2 tsp Chipotle Citrus and add more to taste. If you want extra heat, dice in a fresh jalapeño with the seeds removed. The salsa keeps in the fridge for up to 2 days. Stir before serving.

The salsa holds in the fridge for up to two days. The mango softens slightly and the flavors deepen. If you are making it ahead, leave out the red onion until an hour before serving so it stays crisp.
