If the chai you know is the cinnamon-and-clove cup from a cafe, this is the other one: the fennel-forward chai poured in Indian homes, sweeter and more aromatic. It is built around whole fennel seeds (saunf), with ginger for warmth and green cardamom for lift, over a black tea base.
Expect a naturally sweet, gently cooling cup with a clean anise note, the same family of flavor as licorice, balanced by the heat of fresh ginger. It is rounded, aromatic, and unlike any spiced chai you have had from a box.
We use whole fennel seeds, not pre-ground. Pre-ground fennel fades fast and turns dusty and flat; whole seeds hold their sweet, aromatic oils and release them in the cup, which is what makes this blend taste the way it does.
Brew it as an after-dinner cup, or steep it with oat milk, which brings out the natural sweetness without added sugar. In summer, it is as good iced.

Use one teaspoon of Chai for eight ounces of water in a pan.
