The spices stay whole so they steep clean into a brine and strain out easily. Add a spoonful to the jar or the pot with your cucumbers, green beans, or sliced onions, then pour over your salted vinegar brine. Mustard, dill, and coriander seeds lead, with bay, Ceylon cinnamon, ginger, allspice, Tellicherry pepper, red pepper flakes, and a little turmeric for warmth and color.

This is a whole blend, not a ground one, so nothing clouds the brine and you scoop it back out once the flavor is right. It works for both a quick refrigerator pickle and water-bath canning, as long as you follow a tested recipe for the vinegar and salt. We blend it in small batches in Portland with no salt added, so the pickling brine's salt and acid stay in your control.

Both. The same whole-spice blend flavors a fast refrigerator pickle and a shelf-stable water-bath batch. The difference is the method, not the spice: for canning, follow a tested recipe with the right vinegar-to-water ratio and processing time for safety, and for fridge pickles, mix your brine, add the spice, and chill.

How much do I use per jar?

Start with about a teaspoon of the whole blend per pint jar, or a tablespoon per quart, adjusting to taste. Because the spices are whole, tie them in a small cloth or add them loose and strain later once the brine has taken on their flavor.

Do I need to add salt?

Yes. This blend is salt-free, so the salt comes from your brine recipe along with the vinegar. Keeping the salt separate lets you follow a tested ratio exactly, which matters most for safe canning.

What else is it good for besides pickles?

It flavors a corned beef or pastrami brine, seasons braised cabbage and pot roast, and warms a pot of simmered beets. Anywhere you want that sweet-and-savory pickling aroma, add a spoonful of the whole blend and strain it out later.
