Poured hot, it turns a deep ruby red and tastes bright and tart, the same tang you meet in agua de Jamaica, the hibiscus cooler poured in Mexican homes and at taqueria counters. Drink it warm on a cold evening, or brew it strong and pour it over ice for a ruby cooler in summer. It is caffeine-free. Hibiscus brings the tart, fruity color, peppermint adds a cool lift, and licorice root rounds the edges with a natural sweetness.
Straight peppermint takes on a sharp edge on its own. Here the hibiscus and the natural sweetness of licorice round the mint into something fuller and softer, the kind of blended mint cup people usually round out with honey. Three plants, a vivid color, and a clean finish.
We blend it in small batches in Portland from whole hibiscus, peppermint leaf, and licorice root, with nothing added.

Hibiscus grows more tart the longer it sits in the water. Pulling the leaves at three minutes keeps the cup bright rather than sharp. If you like it milder still, use a scant teaspoon.
