A rim of spiced sugar on the glass, a warm dusting over buttered toast, a spoon stirred into coffee: this is the flavor of a good cup of chai in a sugar you sprinkle. Rim a cocktail or latte glass with it, dust it over oatmeal, French toast, and yogurt, stir it into coffee or a mug of chai, or bake it into cookies, muffins, and snickerdoodles. It is pure cane sugar hand-blended with green cardamom, ginger, sweet Ceylon cinnamon, and cloves.

We blend it fresh in small batches in Portland and keep the grind fine, so it dusts and dissolves evenly instead of sitting in clumps. The cardamom leads, bright and floral, with ginger warmth, mellow Ceylon cinnamon, and a whisper of clove behind it. A little carries a lot of aroma, so a light hand goes further than you expect.

Common Questions

Why does spiced sugar clump or float in my coffee and tea?

The spice particles are lighter than sugar, so they gather at the surface if you add it and walk away. Stir it into the hot liquid for a few seconds and let it dissolve. Our fine grind blends in faster than a coarse one. For iced drinks or cocktails, dissolve it into a warm simple syrup first, then chill.

Where do I use it besides tea?

Almost anywhere you would reach for plain sugar and want warmth with it. Dust it over buttered toast, oatmeal, pancakes, and cut fruit, whisk it into whipped cream, rim a latte or cocktail glass, or roll snickerdoodle dough in it. It also finishes baked apples, sweet potatoes, and rice pudding.

Is this the same as brown sugar?

No. Brown sugar gets its color and flavor from molasses. This is cane sugar carrying real ground spices, so it tastes aromatic and warm rather than caramel-toned. Reach for it when you want the chai spices, not a molasses note.

How much should I use when baking?

Swap it in for part of the sugar a recipe calls for rather than all of it, since the spices come along for the ride. Start with a quarter to a half of the total sugar, taste the batter, and adjust. That keeps the spice present without turning heavy.

How much do I add to a cup of tea?

Start with about a teaspoon per mug, stir well, and add more to taste. The blend already carries the classic chai spices, so it sweetens and seasons in one step.
