These go on at the end, not in the pan. Sumac over roasted chicken. Za'atar on flatbread with olive oil. Aleppo pepper on eggs. Dukkah on bread before a meal. Chaat masala on fruit or fried snacks. Finishing spices add brightness, acidity, and texture that cooking would destroy. Use a generous pinch. More than you think.
