Baking is where spice quality shows up most clearly. A flat cinnamon tastes flat in your cake. Freshly stone-ground Ceylon cinnamon tastes like the actual bark: warm, sweet, slightly floral. Same goes for ginger, cardamom, cloves, nutmeg, and allspice. Everything here is stone-ground fresh. The difference is most obvious in anything where the spice is the main flavor.
